It is, again, still, snowy and kind of crazy weather here, but earlier this week Lindsay posted a bunch of pictures on the internet of last summer, when we probably had a minimum of one very intense picnic per week. Needless to say, it was awesome. The pictures reminded me of how fun it was, but also how amazing her watermelon salad was.
It’s obviously so simple, but wonderfully refreshing and summery. Basically, it’s large cubes of watermelon with a hole scooped out, filled with crumbled feta cheese and coarsely chopped mint. Even though it is pretty much the middle of winter, I am so excited for summer picnics!
